Mama's Meat Loaf

2 lbs of ground chuck
2 eggs
1/4 cup of onions (chopped finely)
6 to 8 soda crackers (crumbled in hands)
1/4 cup of Catsup
1 T. Steak Sauce
1 tsp. Worchesterchire
2 tsp. Soy Sauce
1/4 tsp Garlic Powder
1/4 tsp Cracked Pepper
Salt to taste


Sauce for top of Meat loaf

1/4 cup catsup
2 T Steak SAuce
4 slices of raw bacon

Combine catsup and Steak sauce

Directions!

Note: Don't be afraid to use your hands, this is the only way I know of to be sure all ingredients have blended together

In large bowl combine everything except for the ingredients for top of meat loaf.. mix well, with hands! I do not use a meat loaf pan, because all the fat can not cook off.. so use a square pan, form meat mixture into shape of loaf and place in center of pan.. put sauce on top, letting some drip down the sides, lay strips of bacon on top, side by side. Cook for about an hour at 375 degrees or until center is not pink.. Be sure to spoon off fat periodically.... Yummy!



Mama's Spaghetti Sauce

1 T olive oil, or vegetable oil
1 chopped onion
4 cloves of fresh Garlic Minced
1 T. Dried or fresh Basil
1 T. Dried or fresh Oregano
2 lbs of ground chuck

1 Jar of your favorite Spaghetti Sauce
(I use Paul Newmans)
1 large can whole Tomatoes with Juice (broken up)
3 small cans tomato sauce
1 cup of water
1 tsp Parsley
2 T Parmesan Cheese
1 tsp Sugar
Cracked Pepper and salt to taste

Parmesan Cheese for Top of Spaghetti
1 package Vermicelli


Take out large frying pan, pour olive oil in pan, gently saute over very low heat, onion, garlic, and herbs.. be careful not to scorch the garlic or burn the herbs. add the ground chuck and saute until no longer pink. drain off fat! Add next 8 ingredients. If Sauce is too thin, leave the lid off and cook down to desired consistency. Cook for about 3 hours on low or longer if you have the time. (although I have simmered this for just an hour and it was delicious) Spoon over hot drained Spaghetti. Sprinkle with Parmesan Cheese. Enjoy!



Mama's Taco's

2 lbs ground chuck
1/2 onion chopped
1 envelope Taco Seasoning Mix (use half of it)
2 T Water
1/2 Cup Favorite Salsa
1 dozen Corn Tortillas
1 Tomato chopped
2 Cups of grated Jack cheese
1 ripe Hass Avocado (sliced)
Sour Cream
Black Olives

Brown hamburger in large frying pan, until no longer pink. Add onion, and saute until tender. Add seasoning mix, water and salsa. Cook for about 5 to 10 min. Deep fry corn tortillas until slightly crisp, folding in half before they finish cooking, turn once!(don't overcook) Fold in half! Paper dry inside and out! Set aside until ready to build tacos.

To Build Tacos:

Spoon meat mixture in bottom of tortilla, then the rest in order given.. Be sure to leave room for all the ingredients when building the taco. Top with spoonful of your favorite salsa. Enjoy!
