My friend Jane is a super cook...what she does that is different than what I do..which is create recipes, she just goes to her cubbard and pulls items out and creates a meal...now that's cook'n!

1. Meat Loaf



2lbs hamburger
2 eggs
1 pkg Lipton onion soup mix
Worsteshire sauce, too taste, (probably about 3 tablespoons.)
1 medium onion diced
½ tablespoon (or so) Emeril Essence
1 cup or so oatmeal until it forms a nice loaf easily.
Salt and cracked pepper to taste

Combine all ingredients and mix with your hands until it forms a nice loaf. Bake 375 degress in a standard bread loaf pan for about 1 1/2 hours

Note: Try adding a bit of diced bell pepper or celery. Mushrooms if desired. Try adding about 1/4 cup Heinz 57 for a little kick! Yummy!!




2. Macaroon Brownies



1 cup margarine
2 c white sugar
4 eggs
1 tsp Vanilla
2 c flour
1/2 c baking cocoa
1/2-teaspoon cream of tartar
1/2-cup nuts

Combine the above ingredients. Bake for 45 minutes at 350 degrees in a 9 X 13 rectangular pan.. Cool

Macaroon Filling

1 14 oz. package coconut,
1 14 oz. can sweetened condensed milk
2 teaspoons vanilla.
Mix together and spread over the brownie mixture.

Frosting

3/4 cup white sugar
1/4-cup milk
2 tablespoons butter
1-cup miniature marshmallows
1 cup chocolate chips
1-teaspoon vanilla

Cook until melted. Cool until spreading consistancy about 25 minutes. Spread over the frosting. Cut into bars

Refrigerate!




3. Reeses Cups



1 Cup Peanut butter
1 Cup Butter
1 Cup Graham Cracker Crumbs
1 LB Powdered Sugar
1 Bag Semi Sweet chocolate Baking Chips

Combine butter and peanut butter until thoroughly blended, add 1 cup graham cracker crumbs then powdered sugar. Spread in a 9 X 13 pan, pour melted chocolate chips on top. Spread evenly. Refridgerate! Take out of refrigerator about 20 minutes before you are ready to serve. Cut in squares!




4. Lemon Poppyseed Cornbread



1 standard size Lemon Poppyseed Muffin mix
1 box Jiffy cornbread mix
1/2 cup cinnamon applesauce
All Ingredients as directed on BOTH packages
1/2 cup sugar
sugar For Topping

Mix Lemon Poppyseed Muffin Mix as directed, mix jiffy cornbread mix as directed, combine into one bowl, add 1/2 cup of cinnamon applesauce and 1/2 cup sugar. Pour Into 13 X 9 rectangular pan, sprinkle top of batter with sugar and bake according to Lemon Poppyseed Muffin Mix Time and Temperature.


5. Fresh Cranberry Relish



1 bag of fresh cranberries
1 orange
1 whole apples
1 cup of sugar

Cut apple into fourths, cut out the seeds, leaving the skin on. Cut orange in fourths, get the seeds out but leave the skin on. Wash cranberries and pick over to pick out the bad ones. Take out medium sized bowl and add cranberries, orange, apple, and 1 cup of sugar.. Mix and put in blender a little at a time, blend on the high setting, until you have the consistancy you like. Just a little at a time, putting it in a bowl and then blend more until you have all ingredients blended.
