CHEATING: Adding packaged and canned goods to fresh vegetables and meat
If you notice, I do alot of cheating, but it's the end result that matters, if it tastes good after you add this and that.. then it's ok to cheat! :)
Best Pot Roast
2 or 3 lb chuck roast
1 can beef broth (undiluted)
1 can cream of mushroom soup
1 to 2 cans of water
1 package Liptons Beefy Mushroom Soup
4 to 5 potatoes (Cut into wedges)
4 carrots (split lengthwise, then cut in half)
oil or butter for browning meat
Brown Meat in oil or butter until both sides or evenly browned.. the darker the better, being careful not to burn it.. the add the broth, cream of mushroom soup, and water. Bring to a light boil, stiring to dissolve the cream of mushroom soup. Make sure at this point there is enough liquid to cover the roast.. if not add water! Cook for about 1 hour and 15 minutes or until beef is fork tender.. Remove meat from liquid and keep warm. Add carrots to broth and cook for about 15 minutes, then add potatoes and cook continue cooking until both the carrots and potatoes are tender.. Replace the meat, cover and simmer about 5 min, or until the pot roast and vegetables are heated> Add salt and pepper to taste! Enjoy!

Man Pleasing Beef Burrito's
1 dozen flour totillas
2 lbs of stewing beef
1/2 onion (chopped)
2 garlic cloves (minced)
1/4 cup to 1/2 cup of Salsa
1 small can of chopped chili's (mild)
1 cup of water
salt and pepper
1 can of Refried Beans
1 cup of grated Jack or Colby Cheese
1 T Vegetable Oil
1 Cup grated Jack, cheddar or colby cheese
1 cup of sour cream
In large frying pan, brown stewing beef in oil until nicely browned, add onions and minced garlic, cook for just a few minutes, being careful not to scorch the onion and garlic. Add Salsa and canned chopped chili's. add water and cook over low until meat is fork tender.. The beef mixture should not be too soupy so if it is, just cook down until most (not all) liquid is absorbed. Add salt and pepper to taste!
In medium sized saucepan, add 1 T of Oil, the refried beans and the cheese, cook until all is blended and heated.. Set Aside!
Take out one tortilla and heat it according to package directions or... do as I do and drag the tortilla on the top of your clean burner, (can be gas or electric) back and forth, turning it over until it's no longer at the raw stage on each side. it will become a bit golden brown to dark brown in spots! Place on dinner plate. Spread center of it with bean mixture, (about 2 inches from either side (a rectangular shape) then ladle on some of the beef mixture. sprinkle with grated cheese, abd a dollop of sour cream, fold up one long side, fold opposite ends up, bring last side up then turn over and place on seam. do this with all of them! Keep warm until ready to serve!
Old Fashioned Meat Loaf

1 Lb ground beef
1 1/4 Tsp salt
1/4 Tsp ground black pepper
1/2 Cup chopped onion
1/2 Cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 Cup quick-cooking oats
****Topping:****
1/3 Cup ketchup
2 Tbl brown sugar
1 Tbl prepared mustard
Preheat oven to 375 degrees F. Mix all meatloaf ingredients gently but thoroughly, then shape into a loaf and place in a large rectangular baking dish. Mix ingredients for topping and spread on top of loaf, letting it drip down the sides. Bake for 1 hour. About every 15 min or so, ladle off the grease.
